High Priority - Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed quad sanitizer 3 compartment sink at 0 ppm, staff switched to quad tablets retested at 200 ppm. Corrected On-Site

Basic - Stored food not covered. Observed uncovered opened can of mustard sauce at walk in cooler.

High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed grits (120F - Hot at steam table front counter. As per chef for less than 4hrs, chef moved the grits to cooktop to reheat again to 165°F or above. Corrective Action Taken
