Observed at reach in cooler containers of rice, red beans, marinating chicken. As per operator were made/ prepped the day before. Operator began to place date labels. Corrective Action Taken

Basic - Time/temperature control for safety food thawed in an improper manner. Observed 2 bags of frozen sweet plantains thawing at room temperature at prep counter. Chef removed and placed into reach in cooler to properly thaw. Corrected On-Site
