Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed raw white fish and raw salmon stored in a flip-top reach-in cooler under reduced oxygen packaging. Product labeling indicated that the fish must remain frozen until time of use; however, the products were no longer frozen. Discussed and coached employee in proper methods. Employee removed fish from the package. Corrective Action Taken
