High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In warming units on main make line in kitchen, chicken wings (128F-130F - Hot Holding, retemp @ 175F-178F); chicken nuggets (127F - Hot Holding, retemp @ 172F-176F). Operator stated chicken wings and chicken nuggets were cooked 10 minutes prior. Employee dropped items back into fryers and brought above 165F before hot holding again.
