Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly: - tested to 0ppm. Kitchen Manager checked container and it was empty. Had dish washer change container. Ran dish machine several times. Retested to 100ppm. Corrected On-Site

However, the gauge on the dish machine was not moving to indicate the change in the rinse temperature. Inspector used a thermapen to test the temperature and the water was 156.2° F. Gauge was reading 120° F. Booster for machine reads 165° F on the indicator.
