Employee wiped back of head and after without washing hands employee prepared egg croissant sandwich, discussed with operator employee washed hands. Corrected On-Site

In reach in cooler in back of store precooked sausage patties (51F - Cold Holding) per operator products not portioned or prepared today and held in unit for approximately 2.5 hours, discussed cold holding with operator who moved product to walk in cooler to chill.
