High Priority - Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Advised manager to discontinue use of dishwasher and use 3 compartment sink. Per operator, food not prepped or portioned today. Food moved from walk in cooler, and placed in flip top cooler and held for approximately 1 hour. Food was moved back to walk in cooler. 2), In flip top cooler Mozzarella Shredded Cheese (49F - Cold Holding, per operator,food not prepped or portioned today , food moved from walk in cooler to flip top cooler and held for approximately 35 minutes.
