Manager turned up temperature to reheat to 165F. Corrective Action Taken - From follow-up inspection 2023-04-20: Observed Plantains (130F - Hot Holding) in steam table at 2:45 PM. Operator stated plantains had been in the steam table for 45 minutes. Operator stated that due to quality the lid is kept off on the steam table and the product remains below 135F.
