Cooler across from oven, left top side: cheese (45F - Cold Holding); pizza sauce (44F - Cold Holding) operator states food was not prepared today. Operator relocated to the freezer for rapid chill. All other food in the cooler was at proper temperature Corrective Action Taken

High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Quaternary sanitizer in spray bottles used to sanitize food contact surface over 500ppm. Strip turned blue. Operator corrected to 300ppm. Corrected On-Site
