Potatoes cooked at 7AM at 80F. I explained that they may be reheated to 165F to restart cooling process. Operator opted to voluntarily discarded potatoes. Corrective Action Taken Warning - From follow-up inspection 2026-01-09: Soup cooked this morning at 9AM 122F stored covered in walk in cooler. Operator says he stored it covered on countertop until about 30 minutes ago he temped it at 130F and put in walk in to cool. I instructed operator to remove cover and add ice to begin rapid cooling. I am not issuing a Stop Sale because it sounds like the soup had recently left the hot holding stage before it was stored. Retemped at 80F. Time Extended Corrective Action Taken
