High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On front counter buffet line, milk (52F - Cold Holding) in insulated container. Discussed with operator filling less product and switching out regularly to maintain better temperature, operator removed from buffet line as service was ending shortly and would be discarded after service. Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. In the glass door reach in cooler, open container of sausage gravy and open container of milk from previous two days not date marked.

Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. On shelf of prep kitchen, clean bowl used for storing fruit not inverted or covered. Inverted. Corrected On-Site Repeat Violation
