High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. Upon starting inspection the manager informed me that the walk in cooler/freezer were not functioning properly. She stated that this morning when employee opened the establishment that the ambient temperature inside the cooler was warm and that everything is the freezer was thawed. Inspection temperatures were taken of everything TCS in the cooler and all were temped at consistently 51°F. Items in the freezer were also temped and the internal temperature of those products was consistently 30°F. All TCS products from the walk-in cooler were individually checked for temperature and subsequently removed from the cooler and set aside for disposal as all were outside acceptable temperature range. Manager discarded all of temperature TCS food. Warning
