High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed in their steam table: Beef (125F - Hot Holding) Operator stated it had been out for approximately 2hrs. Operator placed further into the pan and turned up the steamer. Corrective Action Taken

Observed no written plan for their 4hr marked butters on the cook line. Operator has multiple unfilled out copies, and states they have a filled out version but can't find it.
