Operator has move location of stove to office store room area and has added reach-in cooler and reach-in freezer and is doing food prep in that room. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishwasher machine at 000 ppm chlorine sanitizer. instructed operator they may use the machine to wash dishware and utensils, but must use three compartment sink to sanitize items once they come out of the dish machine and then allow items to properly air dry. Warning - From follow-up inspection 2026-01-05: Observed dishwasher machine still at 000 chlorine sanitizer and operator is using 3 compartment sink for sanitation of dishware. Repair service has order new parts for machine to fix it. Time extension to February 16, 2026 to coincide with callback, date for plan review and staff training. Time Extended
