Observed tuna salad, coleslaw and beans in reach-in cooler Employee stated the above items had been prepare onsite more than 24 hours prior , and then proceeded to date items properly to meet standards of inspection.

Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed thawed commercial packed reduced oxygen fish in reach-in cooler at cooks line. Operator stated fish was removed from freezer the day before and then removed fish from packaging. Repeat 3-24-25 Repeat Violation
