High Priority - - From initial inspection : High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Flip top reachin cooler on cook line, cooked sausage (52F - Cold Holding); cut tomatoes (55F - Cold Holding); cheese (50F - Cold Holding) Operator stated items in cooler for 1 hour. Until was unplugged overnight, and plugged in this morning. Corrective Action Taken Warning - From follow-up inspection 2022-01-14: Shredded cheese (40F - Cold Holding); raw shell eggs (46F - Cold Holding); cream cheese (41F - Cold Holding) in reach in cooler on make line in kitchen. Half and half (51F - Cold Holding); individual butter (51F - Cold Holding) sitting in dump sink at server station, per employee both items have been in sink for approximately 30 minutes, both items placed in reach in cooler. Admin Complaint Corrective Action Taken - From follow-up inspection 2022-01-18: Coffee creamer behind counter kept in reach in cooler 45°F. Corrected On-Site Warning - From follow-up inspection 2022-01-14: Observed 3 live roaches on the interior surface of door under silverware at service station, operator began to kill and clean up all roaches.
