Reach in cooler across from grill in cook line area with 45F ambient temperature: lobster cream sauce (45F - Cold Holding); butter (44F - Cold Holding); cooked pasta (45F - Cold Holding) Operator states items were below 41F before being placed in reach in cooler at approximately 1pm.
