Observed reach in cooler designated to hold individual salad dressings to be above the desired temp of 41 degrees or below. Advised manager to move dressings to another cooler and have this unit looked at or replace it. See temps above.

Large Microwave has debris on the inside on the sides and top. CA: Need to give the microwave a deep cleaning. REPEAT Can opener has severe build up on cutting edge, need to give the can opener a deep cleaning. Fryers have severe buildup of food particles all around them. CA: Increase cleaning frequency. Observed "clean" stainless containers with food debris all over most of the containers. CA: Advised the kitchen manager all pans should be rewashed and properly dried.

Observed shredded lettuce in reach in cooler located by the single service coffee cups without a dispose date. Observed cooked broccoli, squash, onions, zucchini and raw beef with no dates. CA: ALL TCS foods must be properly dated with prep or disposal date.
