(a) Before Use After Cleaning. Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning. P consulted with PIC on ensuring staff is compliant with the proper cleaning and sanitizing procedures.

(i) Exceeds 7 days, not including the time that the product is frozen; P
(ii) Is in a container or package that does not bear a date or day; P or
(iii) Is appropriately marked with a date or day that exceeds 7 days . P

Observed no hot water to restrooms, consulted with PIC. PIC has 72 hours to remediate problems.

(a) Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils:

Shall be air-dried or used after adequate draining before contact with food; and

May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.
14C - single-use/single-service articles: properly stored, used

Single use articles and/or single service articles are not being kept in the original protective package or are not being stored by using other means that afford protection form contamination until they are used.
