Regulation: 511-6-1.05(6)(k) - manual warewashing, hot water sanitization temperatures(p)
Observed dish machine not reaching 180°F required for temperature sanitizing. Advised PIC to use QAC sanitizer solution in 3 compartment sink while waiting on dish machine to be serviced.
