6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several potentially hazardous TCS food items improperly cold holding in RIC. CA: All TCS foods being cold held shall be held at 41 degrees F or below. COS: PIC stated food items had been in cooler since previous day. Shredded cheese, corn on the cob, pork, cupped corn, and grated cheese were discarded.

Observed facility using laundry bleach for food contact surface sanitizer. CA: An approved EPA registered disinfectant for food contact surfaces shall be used for food contact surfaces.
