Observed pan of bacon bits and bacon stored by grill uncovered. CA: All unpackaged foods must remain covered while not in use in order to prevent potential contamination. COS: PIC covered pans.

Observed pitcher of salsa dated for disposition 1/27/26 stored in RIC. CA: All TCS foods must be discarded after the 7 day date marking disposition date. COS: PIC discarded salsa.

Observed employee drink stored on top shelf of clean dish rack in dish pit. CA: All employee personal items must be stored in order to prevent potential contamination of food or equipment. COS: PIC discarded employee drink.

Observed scoop stored in bulk flour container with scoop handle in contact with food product. CA: Utensils should be stored to prevent potential contamination during pauses in use COS: CFSM fixed scoop and showed employee how to store it

Observed chicken poured into a bowl stored on the floor, then bowl was moved to the prep counter to stock the prep cooler. CA: PIC instructed employee that food prep must be done on prep counters. Bowl was moved to the dish area and counter top was sanitized.

Observed employee handling food while wearing a watch. CA: Discussed with PIC. Any employee handling food will remove any jewelry on wrist prior to hand washing.

Observed wet sanitizer cloths not hanging out of the sani buckets. CA: PIC placed the sani rags in the buckets so they are fully submerged.

Observed spray bottle not bearing a label with common name of cleaner. CA: PIC had employee label bottle

Observed wet sanitizer cloths on prep top counters throughout kitchen and bar areas. CA: Discussed with PIC that once a cloth is wet it must remain in the sanitizer bucket when not in use.

Observed several employee items throughout reach-in coolers in facility. CA: PIC moved all items to designated area.
