Observed potentially hazardous TCS food (cooked scrambled eggs) being cooled by nonapproved methods; commercially sealed bags of scrambled eggs were 85F and 90F in the reach-in cooler. CA: Discussed proper cooling methods with PIC. PIC chose to discard eggs. Discussed cooling from 135F to 70F within 2 hours, 70F to 41F within 4. Cooling temps should be actively monitored. Proper cooling methods: uncovered/vented shallow pans, ice bath, freezer, etc.
