Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed potentially hazardous TCS foods improperly cooling while tightly sealed and placed in working prep coolers. CA: Employees shall use proper methods to rapidly cool time/temperature control for safety food. COS: Foods were within their time parameters for cooling and were moved to an ice bath to rapidly cool.
