Observed recently prepped potentially hazardous TCS foods cooling by nonapproved methods; tightly sealed containers of spinach were placed in the front prep cooler; in the walk-in cooler cut watermelon was cooling while tightly sealed, and cute spinach and kale were cooling while tightly sealed in stacked containers. CA: Discussed approved methods of cooling with the PIC. Spinach from the front prep cooler was moved to the walk-in cooler to rapidly cool, pans in the walk-in were vented.
