6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed potentially hazardous TCS foods improperly cold holding in two RICs (see temp log). CA: All TCS foods must be properly cold held at 41 degrees F or below. COS: PIC turned coolers to lower setting to allow items to cool (see temp log)
2-2B - proper eating, tasting, drinking, or tobacco use
Regulation: 511-6-1.03(5)(k)1&2 - eating, drinking, or using tobacco (c)
Observed employee drinks being stored in front section of kitchen/service area in reusable tumbler cups. CA: Employee drinks shall be stored in disposable cups with a lid and straw, pulled clean each day.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed outside storage room in need of cleaning and potential repairs of flooring. CA: Physical facilities shall be maintained and clean.
