Observed employee using cleaning with a broom, then put on clean gloves and handle food. CA: Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and before donning gloves to initiate a task that involves working with food. COS: Had PIC stop to wash hands.

Observed two out of the three hand wash sinks and the handwash sink in the bathroom with no paper towels stocked in the dispenser. When brought to the attention of the PIC, a cloth rag was provided. CA: Each handwashing sink shall be provided with individual disposable towels. PIC moved napkins to hand wash sink. Dry cloth towels are not an approved hand drying provision.

Observed container of three compartment sink sanitizer (quaternary ammonia sanitizer) attached to the mechanical dispenser at the three compartment sink containing a blue, toxic substance other than what is named on the manufacture's label. Owner stated he does not know what it is, that his chemical supplier services the dispenser. CA: A container previously used to store poisonous or toxic materials shall not be used to store anything other substances other than what is on the manufacture's label. COS: PIC will using alternate sanitizer tablets that are already available in the facility.

Observed multiple containers of food with scoops stored within the container between use that had the handle laying directly in the food product. CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and the container. COS: PIC adjusted scoops.

Observed 11 different boxes of single-use items stored directly on the floor between both dry storage areas. CA: Single-service and single-use articles shall be stored at least 6 inches above the floor. COS: PIC will have all boxes relocated.
