Observed TCS foods cooling by unapproved methods; tightly sealed in high use working reach-in coolers. CA: Employees shall used proper methods to rapidly cool time/temperature control for safety foods. COS: Foods were within their cooling parameters were moved to rapidly cool.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed employees preparing drinks without wearing an approved hair restraint. CA: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair. COS: PIC gave employees hats.

Observed employees preparing drinks while wearing bracelets. CA: Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food.

Observed employee with painted nails preparing drinks without wearing gloves. CA: Unless wearing gloves in good repair, a food employee may not wear fingernail polish or artificial fingernails when working with exposed food. COS: Employee washed hands and donned clean gloves.
