Observed multiple cans of pizza sauce on dry storage rack with dents in the seam. CA: Discussed with PIC. Cans were separated out to designated area. PIC will label shelf.

Observed improper cold holding of potentially hazardous TCS food (cheesecake filling). Container was stored ambient on the prep counter at 66F. CA: Discussed with PIC. Cheesecake filled had been out of temp for less than 4 hours and was moved to the cooler to rapidly cool.

Observed cans of tomato sauce and pineapples in dry storage area with dents in seam and large dents in sides. CA: Discussed with PIC, cans were separated to designated area to be returned to supplier. Discussed that cans with dented seams or significant dents in sides cannot be used, and must be discarded or separated to designated area not to be used.

Observed dented cans of tomato sauce stored on storage racks in the back kitchen area. CA: Informed PIC that dented cans, especially with dents at the seams, should be discarded. PIC removed cans and placed in a separate area with a label stating "Do Not Use." Educated PIC that dented cans should be discarded, or removed and stored separately with a label.

Observed multiple TCS food items prepped at room temperature and then stored covered in reach-in cooler, improperly cooling (string cheese- 51F; seasoned string cheese- 53F). CA: Informed PIC that any items prepped at room temperature and then cold held need to be properly cooled to 41 degrees Fahrenheit or less. PIC moved items to walk-in cooler and removed lids to allow items to rapidly cool.

Observed wet wiping cloth used for wiping food contact surfaces stored on counter top next to three compartment sink. CA: Educated PIC that wet wiping cloths must be stored in sanitizing solution between uses.
