Observed employee cell phone stored directly on top of pizza boxes. CA: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: PIC moved cellphone to bottom self with employee personal drinks.

Observed potentially hazardous TCS foods (see temp log) improperly cold holding above 41 degrees F. CA: Discussed with PIC, guacamole and parmesan cheese had been in cooler longer than 4 hours, and were discarded. Marinara sauce had been in cooler less than 4 hours, and was vented to cool.

Observed to-go cup stored in mozzarella cheese, being used as scoop. CA: Discussed with PIC, cup was thrown away. Educated on scoops and use of single-service items.

Observed employee personal drinks stored on cart with single use items, and hat stored on top of pizza boxes on the same cart. CA: PIC relocated items. Discussed storing employee personal items in separate, designated area.

Observed potentially hazardous TCS foods (chicken wings, chicken alfredo) improperly cold holding above 41 degrees Fahrenheit in the reach-in cooler that has been designated as the dough proofer. CA: The new box of wings and the chicken alfredo was out of temp for less than 4 hours and relocated to the freezer to rapidly cool. The older box of wings was out of temperature for an unknown amount of time and was discarded. PIC will educate employees and make sure TCS foods are not stored in the proofer.

Observed pizza boxes and sauces stored on the cart designated for employee personal items; employee apron was stored directly on top of the pizza boxes and sauces. CA: Discussed with PIC. Personal items were relocated.
