Observed several employee with beards not wearing a beard restraint while handling/prepping food. CA: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. COS: Could not correct on site and health department will have to follow up. PIC stated they do not have beard restraints at the facility and they will have to be purchased.

Observed employees handling/prepping food while wearing bracelets. CA: Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. COS: PIC instructed employee to remove bracelets. Employee stated that she couldn't remove them and PIC removed her from food prep. If employee moves back to a food prep role, bracelets must be removed prior to hand washing.

Observed wet wiping cloth stored on a prep counter between uses. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in sanitizer solution. COS: Employee placed rag back into the sanitizer bucket.

Observed potentially hazardous TCS foods improperly cold holding above 41 degrees F (see temp log). CA: All TCS foods must be cold held 41 degrees F or below. COS: Sausage burritos were discarded. Buttermilk was within time parameters for cooling and was moved to WIC to rapidly cool.

Observed potentially hazardous TCS foods improperly cold holding in RIC (see temp log). CA: Discussed with PIC, all items had been in the cooler since early this morning. Burritos were temping at 41F or below, and were moved to the WIC. All other food items (cheese, butter, rehydrated onions, bacon) in RIC were discarded.

Observed several stacks of dishes wet stacked. CA: Discussed with PIC, all dishes must be air dried before storing/stacking. Employee assigned to unstack to air dry.
