Observed a container of RTE shredded cheese touching a container of raw fish. CA: Food shall be protected from cross contamination by arranging each type of food in equipment so that cross contamination of one type with another is prevented. COS: PIC discarded cheese.

Observed several food contact surfaces (inside of bulk ice machine walls and ice shoot, soda nozzles at waitress station, and inside of microwaves) not cleaned at a frequency to maintain cleanliness to sight and touch. CA: PIC will have all areas cleaned and sanitized tonight

Observed employee personal food stored in waitress station on a shelf with togo bags and trash bags. CA: PIC discarded food and will educate employees on proper storage areas.

Observed improper vertical separation of raw animal foods and RTE foods. Observed raw steak stored directly above shredded cheese. CA: PIC removed RTE food from the reach-in cooler and placed it into another cooler. Discussed stacking order of raw animal foods and RTE foods.

Observed multiple potentially hazardous foods (raw chicken, raw bee cold held great than 41 degrees Fahrenheit inside of reach-in coolers below grill prep area. See temps. CA: PIC discarded food items. PIC will need to have coolers serviced before being used again.

Observed sanitizer bucket reading 0ppm on chlorine/bleach test strips. CA: Notified PIC. PIC had employee remake sanitizer bucket with the correct concentration.

Observed multiple wet wiping clothes laying out to air dry at dishwashing area. CA: PIC placed wet wiping cloths back into sanitizer solution.
