Observed raw beef stored above raw pork. CA: All raw animal foods must be stored according minimum internal cook temp. COS: PIC rearranged cooler.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(a) - handwashing cleanser, availability (pf)
Observed no hand soap at hand wash sink. CA: All hand wash sinks must be properly supplied with hand soap at all times. COS: Employee refilled dispenser.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed two large containers of salsa and large container of shredded lettuce stored uncovered in RIC. CA: All containers of food unless actively in use or cooling must remain covered to prevent contamination. COS: PIC placed lids.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed scoop handles in direct contact with product (dry rice, shredded lettuce, cut limes, chopped onions). CA: All scoop handles must be stored in order to prevent contamination of product. COS: PIC removed scoop handles from contact with product.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed large pan stored directly on floor in kitchen. CA: All equipment must be stored at least 6" off floor. COS: Pan was moved to in use trash can. Discussed with PIC that was not an appropriate place for pan, and was moved to 3 compartment sink to be wash-rinse-sanitized before being used, and placed in an appropriate area.
