Observed food being cooled by nonapproved method; chicken biscuits stacked in a double layer and tightly wrapped, recently prepped romaine lettuce in a lidded, deep pan in the pass thru cooler on the prep line, multiple TCS items prepped earlier in the morning that were not cooled before placed in sealed containers in the front reach-in cooler and front prep line (see cooling temps in temp log). CA: Discussed proper methods of cooling with the PIC. All foods were moved to the wall-in cooler and pans of food were uncovered/vented. TCS foods must be cooled to 41F prior to being placed on the front service line on the 4 hour time procedure. If temps increase during prep then food must be properly cooled before placed back in reach-in/prep coolers.
