6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed potentially hazardous TCS foods items improperly cold holding above 41 degrees F in RIC in kitchen and FFS RIC in breakfast area. CA: All TCS foods being cold held must be held at 41 degrees F or below. COS: All foods in both coolers had been out of temp for longer than 4 hours and were discarded.
