Observed PIC unaware of items cooling in RIC, and unaware of critical control points for proper cooling parameters. Per discussion, critical control points were being met. CA: PIC shall use proper cooling methods and actively monitor cooling. COS: Egg bites had finished cooking 45 minutes prior and were temping at 78 degrees F in RIC. Provided cooling poster for monitoring CCPs to ensure proper cooling and methods

Observed potentially hazardous TCS foods (yogurt parfait, creamer) improperly cold holding above 41 degrees Fahrenheit (See temp log). CA: Discussed with PIC. Yogurts were out of temp for more than 4 hours and were discarded. Creamer was out of temp for less than 4 hours and will be rapidly cooled. Discussed monitoring temps of the reach-in cooler in the main entryway, ensuring TCS foods are 41F or below when they are put in this cooler and keeping the internal thermometer at the warmest part of the unit.
