Observed drive thru and lobby fountain drink nozzles with black build up on them. CA: All equipment and food contact surfaces shall be clean to sight and touch. CA: PIC sanitized nozzles.

Observed clean pans stacked wet in the clean dish area. CA: Equipment and/or utensils shall be air dried after cleaning and sanitizing them and before use for food. CA: PIC instructed employee to arrange pans to allow for air drying.

Observed TCS food items ( pasteurized eggs 43F, red sauce 43F, and sliced cheese 42 F) not holding 41 F or below. CA: PIC chose to take TCS food items not cold holding 41 F or below still within the 4 hr cooling period to the walk in cooler to cool down to 41 F or below. Also, discussed having maintenance come check the cooler to make sure it is actively cooling.
