Observed TCS foods improperly cooling in tightly sealed containers (salsa in tupperware containers) in RIC. CA: Foods actively cooling shall be loosely covered or uncovered to allow rapid cooling to occur. COS: PIC uncovered containers. Salsa was hitting critical control points

Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed all employees in food service area without proper hair restraints. CA: Any employee handling or preparing food must have proper hair restraints. COS: All employees placed hair restraints.
