6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed time/temperature control for safety food (TCS Food) not being hot held at above 135 degrees F. Corn on the cob observed at 110 degrees F in warmer drawer on main kitchen line. COS: Corn was discarded. CA: Ensure employees are trained to reheat corn to 165 degrees F in microwave prior to placing in warmer. Also, ensure warmer is working properly prior to placing other corn in those bins where they were out of temperature. One element working. Only use that one until other are checked.
