EHS observed containers of sugar and flour not labeled with common name. Violation: Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food. CA: Label all containers of food or ingredients that are not readily recognizable.

EHS observed 3 trays of commercially prepackaged diced tomatoes with use by date of 12/17/24 in walk in cooler. Violation: Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. CA: PIC discarded tomatoes.

EHS observed plastic containers and metal trays/tubs stored clean wet stacked. Violation: equipment and utensils shall be air dried or adequately drained prior use. CA: ensure equipment and utensils are air dried prior to storage.

Violation: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered. Inspector note: EHS observed the top lids on dumpster open. Corrective action: EHS instructed PIC to close dumpster tops and remind employees that dumpsters are to be closed immediately after use.
