EHS observed romaine lettuce and spring mix lettuce at temps between 50-55. Per employee, lettuce was replaced either around 12:30pm or 30 mins ago during inspection. PIC noticed that unit ambient temperature was above 41 degrees.

PIC instructed employees to remove lettuce and place new lettuce from WIC in prep top coolers/ref Drawers. EHS took temps from WIC for romaine lettuce and it was 41 degrees. PIC informed EHS that containers of spring mix was available in prep top cooler already. EHS took temps of that early on during inspection. This was COS.
