EHS observed that handwash station at FOH did not have hand drying implement; had sanitizer bucket stored in basin.

EHS observed bulk ice machine with buildup of apparent biofilm on interior baffle.
Equipment food-contact surfaces and utensils shall be clean to sight and touch.
PIC removed baffle for sanitizing.

EHS observed cloths held in sanitizer bucket for between-use wiping of bar wands registering zero on testing strips.
Cloths in-use for wiping counters and other equipment surfaces shall be:
(i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and
(ii) Laundered daily.
PIC to replace liquid in bucket with appropriate sanitizer.
