EHS observed that handwash station at FOH did not have hand drying implement; had sanitizer bucket stored in basin.

Hand Drying Provision. Each handwashing sink or group of adjacent handwashing sinks shall be provided with:

1. Individual, disposable towels; Pf

2. A continuous towel system that supplies the user with a clean towel; Pf

3. A heated-air hand drying device; Pf or

4. A hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures.Pf

PIC cleared basin; supplied towels.

EHS observed bulk ice machine with buildup of apparent biofilm on interior baffle.

Equipment food-contact surfaces and utensils shall be clean to sight and touch.

PIC removed baffle for sanitizing.

EHS observed cloths held in sanitizer bucket for between-use wiping of bar wands registering zero on testing strips.

Cloths in-use for wiping counters and other equipment surfaces shall be:

(i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and

(ii) Laundered daily.

PIC to replace liquid in bucket with appropriate sanitizer.

EHS observed 3C sink sanitizer mixer not drawing sanitizer correctly.

Equipment shall be maintained in a state of repair.

PIC to repair or replace sanitizer mixer.

EHS observed ice machine service lip had a buildup of residue from use.
