15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
EHS observed:
-nonfunctional 3C mixer in back of house, -missing grill panel above front of house grill, -nonfunctional, empty RICs in front of house
Equipment shall be maintained in a state of repair.
PIC to repair/replace.

Regulation: 511-6-1.05(6)(b) - cutting surfaces (c)
EHS observed:
-cutting/prep boards in front of main grill with significant chipping/scarring with buildup in cracks/surface.
Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they cannot be resurfaced.
PIC to repair/replace.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
EHS observed:
-ice buildup on bottom of front RIF -encrustment/buildup inside front RIC/RIF from food debris/grease -interior surfaces of front microwave with splatter/food buildup
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
PIC to clean, maintain.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
EHS observed:
-buildup of grease, dripping in rear of main grill area
PIC to clean and maintain.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
EHS observed:
-chargers, cable, speaker stored above waffle area with no separation from customer items
Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination.
PIC to separate items, maintain designated area. PIC removed items.
