EHS observed a single-use red solo cup inside a bulk container of soy sauce. PIC removed and discarded cup when brought to his attention.

- Single-service and single-use articles may not be reused.
CA: EHS advised the PIC that single use equipment may not be used/ re-used in facility operations.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(h) - nonfood-contact surfaces (c)
EHS observed red bricks/ blocks being used as risers to hold the ice machine 6 inches off of the floor.
511-6-1.05(2)(h) - Nonfood-Contact Surfaces (C) (h) Nonfood-contact Surfaces. Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.
CA: EHS advised PIC that cleanable equipment, like plastic risers, should be used instead of bricks.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
EHS observed standing water in the refrigeration portion of the prep top unit located near the grill. In addition, EHS observed grime build up, in general need of cleaning.
511-6-1.05(7)(d) - Nonfood-Contact Surfaces (C) (d) Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
CA: EHS advised the PIC to remove the observed standing water and recommended that the cleaning frequency of the unit is increased.
17C - physical facilities installed, maintained, and clean

EHS observed yellow stained ceiling tiles throughout the storage and kitchen areas.

The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.

Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing.
CA: EHS advised the PIC that the observed tiles should be cleaned, if possible, or discarded and replaced.

EHS observed damaged and missing floor tiles underneath the prep top cooling unit next to the main grill.
