EHS observed shredded cheese, american sliced cheese, butter, whole milk in front/rear RIC temping at 48-52 F.

As items were received that day, but no temps taken during receiving to verify cooling methodology otherwise and temps did not change between first and second temps, PIC discarded TCS items in coolers. EHS advised PIC to ensure coolers functional despite door discipline.

EHS observed lack of paper towels at handwash station in kitchen.

Each handwashing sink or group of adjacent handwashing sinks shall be provided with:

1. Individual, disposable towels;

2. A continuous towel system that supplies the user with a clean towel;

3. A heated-air hand drying device;

4. A hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures.

PIC stocked handsink during inspection.

EHS observed working bottle of unknown substance stored at warewash station.

Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material.

PIC discarded, PIC to label in future.

EHS observed:

• gasket on rear milk cooler damaged
• two knives on rear knife rack, handles damaged, chipped blade

Equipment shall be maintained in a state of repair.

PIC to repair or replace.

Observed CFSM posted expired 4/2023. EH advised PIC Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) as specified in paragraph (b) of this subsection to ensure food safety is being managed within the food service establishment during all hours of operation as specified within paragraph (d) of this subsection. PIC advised that facility is aware and awaiting to schedule. PIC is to schedule and have within 60 days.
