6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
EHS observed shredded cheese, american sliced cheese, butter, whole milk in front/rear RIC temping at 48-52 F.
As items were received that day, but no temps taken during receiving to verify cooling methodology otherwise and temps did not change between first and second temps, PIC discarded TCS items in coolers. EHS advised PIC to ensure coolers functional despite door discipline.
