6-1A - proper cold holding temperatures
Observed the cooler for the raw burgers to be staged in, out of temperature with multiple burgers reading in the 46-50 degrees Fahrenheit range. CA: Time/temperature control for safety food being cold held shall be maintained at a temperature of 41 degrees Fahrenheit or below for safety. COS: Burgers had only been out of temperature for about an hour so they were allowed to be moved into the Walk-in Cooler and a "Do Not Use" sign on the cooler till it is corrected.
16A - hot and cold water available; adequate pressure
Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
Observed one handwash sink not being able to stay warm during use. CA:Hot water generation shall be sufficient to meet peak demands during operatinh times. Have the hot water fixed on the handwash station within 72 hours.
