Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed water in sanitizer sink without any sanitizer. Sanitizer dispenser did not appear to be functioning properly. All food contact surfaces shall be cleaned and sanitized prior to use. COS. Sanitizer was manually added to proper dilution.

Observed trash and food debris on floors of dry storage and under prep areas in main kitchen. All non-food contact surfaces shall be cleaned frequently to prevent pests.
