Main kitchen handwashing sink was not being maintained so that it was accessible at all times for employee use. COS CFSM removed equipment blocking sink and removed items inside it.

Observed raw chicken being stored over raw beef in RIC. COS CFSM restacked foods in their proper order and added a posted listing the proper selves foods need to be store when in a RIC. All foods were covered and no cross contamination was noted.

Observed TCS foods being stacked in two layers on the stove. Layer one was in temp and layer two was out of temp. COS: TCS foods that were out of temp were discarded.

Person in charge was unable to demonstrate knowledge; could not respond correctly to the questions as they related to the food service operations conducted at the establishment. COS: Inspector conducted on-site training with the PIC/CFSM prior to reopening.
