Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed dish washing equipment not dispensing sanitizer correctly. Sanitizer concentration: 0 ppm
COS: all dishes will be sanitized in sink with bleach at 50 to 100 ppm. Ecolab will be called to fix the issue as soon as possible.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed servers use Quat sanitizer for wiping cloths but do not have the correct test strips. CA: Obtain the appropriate test strips.
