Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed freshly prepped TCS foods wrapped tightly with internal temperature 51°F. Foods should be rapidly cooled to 41°F or below before being covered tightly for storage. COS uncovered and to finish cooling properly.
